Live Walnut Pesto Sauce

Walnuts are an amazing food! They are the only nuts that contain Omega 3 oils, and they help to reduce pain and inflammation. They also contain fair amounts of protein, zinc, calcium and potassium. This delicious raw pesto sauce can be used in several ways: over pasta, as a dip for veggies or crackers, or as a spread for sandwiches.

Ingredients: (Makes 2 cups)
1 1/2 cups raw walnuts
3/4 cup olive oil
2 cups chopped basil leaves and stems
1 cup Italian parsley leaves
2 tablespoons minced fresh garlic
Juice of one lemon
1/4 cup freshly grated Parmesan cheese (optional)

1. In a food processor blend the walnuts into a coarse meal
2. Add the olive oil and blend briefly to combine
3. Add the herbs, garlic and lemon and blend into a thick paste
4. Season with salt and pepper and add cheese if using

Be sure to refrigerate if you don’t use it all at once.
