Vegan Banana Bread

I doctored this recipe up from a few other recipes that I had tried. It’s nutritious (ground flax seeds provide much needed omega-3 oils!) and absolutely delicious…moist, sweet but not too sugary, with full banana flavor. Plus, I love that it’s easy- only 1 bowl and no mixer! You could add nuts, chocolate chips or frosting to dress it up.

4 ripe bananas
1/3 cup canola oil
1/2 cup sugar, or sucanat
1/2 cup applesauce
1 1/2 teaspoon vanilla extract
4 tbsp ground flax seeds ground (use a coffee grinder)
1 teaspoon baking soda
pinch of salt
1 1/2 cup whole wheat flour
2 tbsp agave nectar

Preheat oven to 350 degrees. With a wooden spoon, mix oil into the mashed bananas in a large mixing bowl. Add and mix in sugar, applesauce, and vanilla. Sprinkle baking soda, salt and flax seeds into the mixture and lastly add agave nectar and flour. Pour into a greased (you could use more canola oil) 4×8 inch loaf pan. Bake for 50 minutes to an hour. (Ovens vary, check often.) Cool on a rack. Enjoy!
